Fresh, local trout has been a popular menu item at Omni Homestead for more than a century. Allegheny Mountain Trout has been a guest favorite at this hotel for generations and is still served today in the hotel’s Dining Room. While the dish has been updated over the years, it currently features Sautéed Allegheny Mountain Trout Almondine and is served with marble potatoes, haricots verts, macerated grapes and brown butter sauce. The trout is sourced from the Virginia Trout Company, located less than an hour away from the resort, just outside of Monterey, Virginia in Highland County. The partnership between The Homestead and the Virginia Trout Company is one of the longest-running between the resort and local food purveyors. The recipe was featured in Former Executive Chef Albert Schnarwyler’s 1989 book, Dining at The Homestead.
Homestead Donuts are made fresh every day using a recipe that has been around since 1902. The bakers at the Homestead churn out 1,000 donuts a day, and can make up to 2,000 donuts on a busy day. Additionally, 10 to 15 pounds of donuts are used for the donut bread pudding every week.

Jefferson's Restaurant and Taproom A casual, yet elegant establishment, Jefferson's serves modern, grilled American fare that employs a farm-to-table approach by only using hand-picked prime and regional meats. Indoors or out, the restaurant also offers creative small plates and lighter fare during lunch and dinner.
Woody's Named after the hotel's beloved long-tenured associate Woodrow “Woody” Pettus, Woody's is a guest favorite for lunch and dinner. The menu features delectable soups, salads, sandwiches and entrées with an Italian flair along with popular craft pizzas. Woody’s is located in the Casino building, one of the resort's most historic structures, and is conveniently situated near the Old Course and Allegheny Springs.
Kober's at The Mountain Lodge Kober's at The Mountain Lodge is the signature winter smokehouse restaurant named for Sepp Kober, known as the "Father of Southern Skiing". The menu is composed of slow-smoked, freshly-prepared dishes, bold barbeque flavors, and classic Southern sides along with a selection of bourbons, beers and wines. Kober's is an enjoyable experience in a casual, family-friendly environment.
Martha's Market For a quick bite, coffee break, or sweet treat, Martha's Market offers a variety of quality coffee drinks and pastries. Breakfast pastries are available in the morning, and desserts and skillfully prepared signature cakes are served throughout the day along with a selection of sandwiches and salads.
Rubino's Open seasonally, Rubino's is situated on the Cascades Course and offers a quick lunch service with American golf-inspired comfort food including a full range of salads, hot and cold sandwiches, burgers, and hot dogs along with stunning views of the surrounding valley.
