The Birdbath Martini is an authentic Fairmont Royal York creation and has been a hallmark of the hotel's Liberty Bar since the 1970s. The Birdbath Martini gets its name from the birdbath vessel, a custom-made, hand-blown glass carafe, that the martini is lightly stirred in before being poured into a chilled martini glass. This tableside process ensures that the cocktail is properly chilled before reaching the guest, which creates an optimally dlelicious martini.

Fairmont Royal York has been serving its signature macaroons for nearly 50 years. The macaroons are available as a guest amenity via in-room dining or served as part of Afternoon Tea. Afternoon Tea has been a Royal York tradition since 1929.

Fairmont Royal York Coconut Macaroons Recipe Yield : Approximately 25 Coconut Macaroons

Ingredients: 6 Egg Whites 1 cup Granulated Sugar 2 cups Fine Dry Coconut Flakes or Shred 2 Tbsp Cornstarch 1 Tbsp Cake Flour 1 Tbsp All Purpose Flour Optional to add Zest of Lemons

Preparation 1. Combine all ingredients and warm lightly on a hot water bath. 2. Pipe the mixture to form required shapes. 3. Bake at 325°F for about 15 minutes.
