Alongside the owner, Carol Kolozs Fischer, the team worked to maintain the original essence of this authentic Henequen hacienda. Together, they diligently restored its existing Spanish Colonial architecture to reflect its original appearance. Located on one of Mérida’s most prominent avenues—Paseo de Montejo—Rosas & Xocolate Boutique Hotel exemplifies the rich history of Mexico’s Yucatán region.
