Sopa de Lima is a traditional lime soup made with chicken, green bell pepper, onions, and tomatoes, and is representative of Yucatan cuisine. Cochinita pibil is a traditional slow-roasted pork dish that originated on the Yucatan Peninsula during the Spanish Conquest. The Mayans cooked the cochinita, or baby pig, in an underground oven called a pib, which is how the dish got its name. The pork is seasoned and marinated in a solution of bitter orange juice and annatto paste, which gives the dish its characteristic burnt orange color. The pork is then wrapped in banana leaves and slow roasted in the oven. This traditional dish has been served at the Mayaland Hotel & Bungalows since 1923.
